Where they come from
Wada Farms,
Pingree, Idaho
These aren't grocery-store potatoes. They come out of the ground in southeast Idaho during the fall harvest, get packed at Wada Farms, and are trucked four hours west to Star for our pickup day. Blackfoot, just up the road from the farm, calls itself the Potato Capital of the World.

Three generations, eighty years
Frank Wada came from Japan to California at thirteen. When the Second World War broke out and Japanese Americans were forced from the coast, Frank and his wife Agnus moved inland to Pingree, Idaho, and avoided the internment camps. In 1943 they put in their first crop on 160 rented acres.
Their son Albert took over and grew it to 400 acres, then built the first packing shed, the truck fleet, and the national business. In 2010 Albert handed it to his son Bryan, who runs it now. Eighty-odd years on from those 160 rented acres, the family farms about 30,000 irrigated acres across three southeast Idaho counties — and still rotates crops through them to keep the ground healthy.

Generations of the same family
Fifty pounds is a lot of potatoes. Two things to know:
Don't refrigerate them. Cold turns the starch to sugar, and they come out sweet and dark when you cook them. A dark, cool cupboard is right, and they'll keep for weeks.
Don't wash them until you're cooking. The dirt on the skin is protecting them. Rinse under running water when you're ready to use them.

Can't make the pickup window? Arrange delivery with the player you ordered from. Boxes not picked up or arranged for by 2:00 p.m. are donated to a local food bank — potatoes don't keep in a hot car, and we'd rather they feed someone.
